Bread pudding with butterscotch whiskey sauce

Bread pudding is one of the easiest desserts that you can make. It's warm and so, so good. You can eat it for breakfast or brunch too if you like. It's really quick to throw together too. And with whiskey sauce, you can't go wrong. The sauce can be changed to bourbon or rum if you prefer, or leave out the alcohol altogether. I would recommend using a rum extract if you do though. It's really versatile. 

Turkey Parmesan Meatballs

Chicken Parmesan is one of my all time favorites. Nothing beats fried chicken thats smothered in tomato sauce and covered in cheese! Today I made a lightened up meatball version and they are yummy! These are great to use for meatball sliders, or to eat on their own. They come together really quickly too. 

Wild Boar Stew

Stew is our go to meal for busy nights. It's so easy to set the crock pot in the morning, and by supper time, you have an awesome meal, ready to eat. Sometimes it's venison stew, and sometimes it's chicken. It just depends on what we have in the freezer. I'm really lucky, my Dad hunts, so we get game meat, quite often. But you can use regular pork in place of the boar, it's really good too. 

2 minute Flax Seed Muffin

Ok so, I know a lot of people may be put off by the name, but if you're on a low carb diet, and you need something sweet asap, this is for you. They really are good, and they're 0 net carbs per serving! I usually have one every day for breakfast, and it has most of your daily recommended fiber intake. And you can have one in about 2 minutes. You can change out the extracts as you like,. Wedding cake flavor? Use almond extract. You can use lemon, or butter or any flavor really.

Low Carb Cheeseburger Bake

So here's another Low Carb favorite around the house. It's all the best parts of a cheeseburger, minus all of the carbs! And to be honest, I don't even miss the bread. Of course if you want bread you can certainly serve it on bread, or egg waffles even. It's ready from start to finish in about an hour. 

Rotisserie Style Roasted Chicken

If there's one thing that is my favorite in the grocery store, it's rotisserie chicken. They're Keto / Low Carb friendly and delicious. I used to grab one every time I went shopping just because they're sooooo easy. And they really do seem like a bargain, until you do the math. In the store where I shop, they're 8.99. Seems like a good deal right? BUT, I can buy a whole chicken from the butcher for about 3.50. AND it's about 2 pounds larger. So it's a no brainer. 

Caramel Apples

Perfect for Fall or any occasion really. These apples are sweet and covered with delicious caramel, you really can't beat it. They're pretty simple to make too, the hardest part is standing over the pot and stirring. 

Low Carb / Keto Bacon Cheeseburger Lettuce Wraps

Eating low carb does not mean you have to give up the things you love, you just have to change your approach and make a few modifications. I LOVE cheeseburgers, probably the reason I'm having to do low carb now, but here is an easy way to get your cheeseburger fix. They taste great, and I've been eating low carb for about a month now. I really don't even miss the bread that much. What I do miss is adding as much seasoning as I want, seasonings have carbs. Can you believe that? 

Faux-tatoes

So here in Louisiana EVERYTHING is eaten over rice. However, I am on a low carb / keto "lifestyle change", otherwise known as a diet. So while my husband and daughter get to eat rice, I have to improvise. I've seen cauliflower mash made on various websites, usually full of bacon and cheese. While equally delicious, I need something that I can eat with roast, to substitute for the rice. More like plain mashed potatoes. So here is the recipe that I'm currently using as my substitute. It's pretty easy and tasty too. 

Crockpot Pork Roast and Gravy

Ok so the weather has gotten a little cooler, and now that we've put the gumbo pot away, we wanted something a little more "stick to your ribs". We had a ton of cleaning and errands to do today, plus my oven being out of commission, it was the perfect day to bust out the Crock-Pot. One of the easiest meals you'll ever make. 

Red Velvet Cake

Red velvet cake is an old recipe and has a ton of variations. Some people say it's a chocolate cake with red coloring, but honestly it doesn't have enough cocoa powder to be considered chocolate in my opinion. This recipe is the one I use, its so velvety and moist. It's always a treat. You can also change out the food coloring for different seasons, red and green for Christmas, blue just because, or any other color really.

Basic cream cheese icing

Icing icing icing! Everyone should have a basic cream cheese icing in their arsenal. And cream cheese is a such a great go to icing when you want something really rich. Perfect on red velvet or chocolate cake!

Fried Venison Back Straps

Venison back straps are pretty much the Holy Grail of deer meat. It's so tender and flavorful, and very hard to come by unless you know or are someone who hunts. Shout out to my Dad for the meat we're frying tonight!

They're are a few ways that are my favorite, and fried in fish fry is one of them. Crispy and crunchy, they're always a hit.
