Ok so the weather has gotten a little cooler, and now that we've put the gumbo pot away, we wanted something a little more "stick to your ribs". We had a ton of cleaning and errands to do today, plus my oven being out of commission, it was the perfect day to bust out the Crock-Pot. One of the easiest meals you'll ever make.
Here's what you'll need:
- 1 - 5 to 6 pound pork picnic roast
- 1 onion - chopped
- 1 bell pepper - chopped
- 5 to 6 cloves of garlic - minced
- 2 to 3 tablespoons of Cajun Seasoning like Slap Ya Mama
- 2 cups of water
- Cooked rice for serving
Once all of your veggies are chopped, add them to your Crock-pot.
If your roast has a fat cap score it in a criss cross pattern. It helps the fat cook down into the rest of the meat. Or you can remove it if you prefer.
Next add the roast and 1 tablespoon of Cajun seasoning.
Add about 2 cups of water.
Set your Crock-Pot on high and let it cook for 4 to 6 hours. Once cooked, taste and add more seasoning if needed.
Thats it. Pretty simple. The hardest part is waiting for it to finish.
Serve over cooked rice.
