2 minute Flax Seed Muffin
Ok so, I know a lot of people may be put off by the name, but if you're on a low carb diet, and you need something sweet asap, this is for you. They really are good, and they're 0 net carbs per serving! I usually have one every day for breakfast, and it has most of your daily recommended fiber intake. And you can have one in about 2 minutes. You can change out the extracts as you like,. Wedding cake flavor? Use almond extract. You can use lemon, or butter or any flavor really.
Heres what you'll need:
- 1/2 cup of flax seed meal (not seeds)
- 2 eggs
- 1 teaspoon of baking powder
- 2 packets of stevia, or other sweetener to taste
- 1/2 teaspoon of vanilla
- 1 teaspoon of cooking oil
Place the flax seed meal, stevia and baking powder into a microwave safe coffee mug. Mix well.
Add in the vanilla extract, cooking oil and 2 eggs. Mix well.
Cook in the microwave for 120 seconds. Cooking times can vary so just watch to make sure yours is ok. It will pop up pretty high, then go back down a little once you take it out of the microwave.
I like to pour a little of the Walden Farms sugar free pancake syrup over the top. They also have blueberry and strawberry, but you can use whatever kind of sugar free syrup you like. The calorie count is using Walden Farms as they have no calories or carbs, so if you're using a different brand, make sure to count them.
