Low Carb Cheeseburger Bake
So here's another Low Carb favorite around the house. It's all the best parts of a cheeseburger, minus all of the carbs! And to be honest, I don't even miss the bread. Of course if you want bread you can certainly serve it on bread, or egg waffles even. It's ready from start to finish in about an hour.
Here's what you'll need:
- 1 1/2 pounds of ground meat
- 1/2 cup of chopped onion
- 4 cloves of minced garlic
- 5 slices of bacon
- 6 eggs
- 8 oz of sharp cheddar cheese
- Salt and pepper to taste (or 2 teaspoons of Slap Ya Mama Cajun Seasoning)
Cut your bacon into small pieces. Add the bacon and ground beef to a pot and brown well. Add in your onions and garlic, and cook for about 5 minutes, until the onions are clear. Add in the salt and pepper, or Slap Ya Mama and turn off the heat.
Beat the 6 eggs in a bowl, and set aside.
Transfer your browned meat to a 9x13" pan that's been coated in nonstick cooking spray. Then pour the beaten eggs over the meat, covering as much of the meat as you can.
Top with 8oz of shredded sharp cheddar cheese. You can use the preshredded if you like, but they sometimes add fillers to keep the shreds separate. I can control the carb count a little better by shredding it myself.
Bake at 350° for 25 to 30 minutes, until the cheese is all bubbly.
And that's all there is to it. you could top it with lettuce and tomato if you like, just make sure to add them to your carb count.
