Root beer float cupcakes

All the goodness of a root beer float packed into a portable cupcake! These are so yummy! They go fast, so you better eat up before your family gets to them first!

Here's how you can make your own!  You'll need:

For the icing: 

  • 1 cup of butter
  • 4 cups of powdered sugar
  • 1 tablespoon of root beer concentrate or extract
  • 1 tablespoon of vanilla extract
  • 1 teaspoon of butter extract
  • 4 or 5 tablespoons of milk or cream

Make your cake mix according to this recipe here, or prepare your boxed cake mix according to the directions. If you are using a boxed mix, add in 2 teaspoons of vanilla extract and 1 teaspoon of butter extract. Once the mix is prepared, add in 1 tablespoon of root beer extract, and mix well.

After you have added the extracts and mixed, add the cake batter to a muffin tin, lined with muffin liners. Fill them 2/3rds full.

Bake them for 25 to 30 minutes at 350 degrees.

Let them cool for 30 minutes before frosting.

To make the frosting you'll need to mix your butter on low speed for about a minute.

Add in the extracts and continue mixing to combine.

Add in the powdered sugar 1 cup at a time. Add a tablespoon or 2 of milk or cream if it seems a little hard to mix.

Fill a piping bag and use it to frost your cupcakes. It makes about 30 cupcakes.
