Ice box cake isn't really a cake, it's more like a trifle. It's really easy to put together too, the hardest part is waiting for it to set up in the fridge.
Here's the recipe:
- 2 boxes of instant vanilla pudding mix
- 4 1/2 cups of milk
- 6 oz of milk chocolate chips plus 1/2 cup
- 2 tablespoons of butter
- 1 box of graham crackers
- Caramel sauce (store bought or homemade)
First prepare the pudding according to the package directions, using the 2 packages of pudding mix and 4 cups of the milk.
Let it set up in the fridge for about 15 minutes.
While the pudding is setting up make the chocolate sauce. Heat up 1/2 cup of milk in the microwave. Stir every 30 seconds or so, you want it hot, but not boiling.
Add in the butter and stir well with a whisk.
Add in 6 ounces of the chocolate chips. Let sit for a minute, the mix well.
Let it cool in the fridge for about an hour.
Start layering a 9 by 13 inch pan once the pudding and chocolate sauce are ready. Start with a layer of graham crackers on the bottom.
Add half of the vanilla pudding.
Add another layer of graham crackers.
Add the rest of the vanilla pudding.
Top with another layer of graham crackers.
After you add the last layer of graham crackers, mix the remaining 1/2 cup of chocolate chips with the cooled chocolate, then top the last layer of graham crackers.
Drizzle caramel sauce over the top.
Cover and leave in the fridge, 6 hours to overnight.
