Meringues are soft and sweet and melt in your mouth. They're pretty easy to make and are really delicate. These have a layer or white chocolate buttercream sandwiched between them. You're going to love them.
For the meringues you'll need:
- 8 egg whites
- 1/2 teaspoon of cream of tartar
- 1 cup of powdered sugar
- 1 half pint of raspberries
- 1/4 cup of granulated sugar
- 2 tablespoons of lemon juice
For the buttercream you'll need:
- 1 cup of softened butter
- 2 cups of powdered sugar
- 1 cup of shaved white chocolate
- 1 teaspoon of vanilla
Wash and place the raspberries in a sauce pan.
Add 1/4 cup of granulated sugar and lemon juice to the sauce pan.
Let the raspberries simmer for 5 minutes and set aside.
Separate the eggs. Put the egg whites in a large mixing bowl and add the 1/2 teaspoon of cream of tartar.
Mix the egg whites on medium high speed with a mixer until soft peaks form.
Add in 1 cup of powdered of sugar a half cup at a time. Continue mixing until you have firmer peaks.
Using a spoon, spread the egg whites out on a cookie sheet. Use parchment paper, so they don't stick. I used non sticking foil, and some of them still stuck to the foil.
Once you have them spooned on the pan, put a small dollup of the raspberry sauce on the top of each one.
Using the spoon, gently swirl the raspberry into the egg whites. Bake at 200 for about 30 minutes. If it is very humid outside, yoy may have to adjust your baking time up to 30 minutes more.
Once they're baked they will be a little browned around the edges.
Next is time to make the buttercream. Put the softened butter into a large mixing bowl.
Cream the butter, add the vanilla and the powdered sugar a half cup at a time. Continue until all of the sugar is incorporated.
Melt the chocolate in the microwave, stirring every 30 seconds until fully melted.
Add the melted chocolate to the sugar and butter.
Mix well and set aside.
Once the meringues have cooled, take one and flip it over, fill with the buttercream and make little sandwiches with it. And that's all you have to do.
