Red Velvet Chess Cake
My grandmother used to make chess cake when I was a child. It's was such a buttery and delicious cake. My grandmother made hers with yellow cake, but I decided try something a little different tonight, since we're red velvet junkies here.
It only uses 5 ingredients that you may even have on hand already. Here's what you'll need.
- 1 box of red cake mix
- 3 eggs
- 8 ounces of cream cheese, softened
- 1 stick of butter, melted
- 4 cups of powdered sugar
And that's it. Pretty easy list.
Preheat your oven to 325°.
First you'll needed to dump cake mix into a mixing bowl with 1 egg and the melted stick of butter.
It will be more like a dough than a cake mix. I used a wooden spoon to mix mine.
Grease a 9x13 inch pan. Press the dough firmly into the bottom of the pan.
In a mixing bowl added the softened cream cheese and remaining 2 eggs.
Mix on medium to high speed for 3 to 4 minutes.
Add in the powdered sugar a half of a cup at a time until it's all incorporated.
Once all of the sugar is mixed in pour it over the cake mix.
Spread it evenly over the top with a spatula.
Bake at 325° for 45 minutes. It will be browned around the edges when it's ready. Don't over bake it, you want the cake be soft and gooey.
