Chocolate Chip Banana Bread
Banana bread, is such a quick and easy bread. It's sweet and moist and smells heavenly while it's baking. It's also very versatile, milk chocolate chips can be swapped for white chocolate, or left out completely. You can add in any nuts of your choice, the possibilities are endless. It's really up to you.
It's also very kid friendly, so your little ones can make this as well. You can mix everything by hand if you like. I'm using a stand mixer, well basically because it's new, and I want to use it for everything.
What you'll need is:
- 3 very ripe bananas
- 1 stick of softened butter
- 1 cup of sugar
- 1 tablespoon of vanilla extract
- 1 extra large egg
- 1/2 teaspoon of salt
- 3 1/2 cups of flour
- 2 teaspoons of baking powder
- 2 teaspoons of baking soda
- 1 11.5 oz bag of milk chocolate chips
Preheat your oven to 350°
Add your butter, bananas and sugar to the bottom of your mixing bowl.
Beat on low for about a minute.
Add in your egg and vanilla extract.
Beat for another minute, then add in the flour.
Beat for about a minute, until all of the flour has been incorporated.
Fold in the chocolate chips.
Then spread it into 2 8x8" square pans that have been sprayed with non stick cooking spray.
Bake at 350° for 25 to 35 minutes.
**Note... You can also use a 9x5 loaf pan. And make just 1 loaf. Adjust your cooking time to 30 to 40 minutes.
It's ready when a toothpick inserted into the center, comes out clean.
