Icing icing icing! Everyone should have a basic cream cheese icing in their arsenal. And cream cheese is a such a great go to icing when you want something really rich. Perfect on red velvet or chocolate cake!
What you'll need is:
- 3/4 cup of room temperature butter
- 1 8oz block of room temperature cream cheese
- 2 teaspoons of vanilla extract
- 1/2 teaspoon of salt
- 2 pounds of powdered sugar
- 3 to 5 tablespoons of milk
First you'll need to whip your butter. Using the whisk attachment on your stand mixer, whip the butter for about a minute, until it lightens up a little.
Next add in your softened cream cheese, and whip them together for 2 minutes.
Makes sure to whip them well, and that they are room temperature. If they are too cold, your icing can turn out lumpy.
Add in your vanilla extract, and mix for about 30 seconds.
Finally add in your salt and powdered sugar, a half cup at a time, until all of the sugar is incorporated. Add a tablespoon of milk or so whenever the icing becomes a little stiff.
