Cajun Chicken Alfredo
This is a really quick and easy weeknight meal that really goes over well. It's creamy cheesy goodness in a bowl. You can also add some veggies, or some sausage and it's really good too.
Here are the ingredients:
2 pounds of boneless skinless chicken
1/2 of a medium onion chopped
5 or 6 garlic cloves minced
1 to 2 tablespoons of Cajun seasoning
1/2 cup of butter
1 cup of heavy whipping cream
1 cup of shredded Parmesan cheese, plus more for topping
1 1lb box of pasta, cooked & drained
Chopped green onion tops for garnish
First, you'll need to cut your chicken into bite sized pieces, and dry well with a paper towel. You can use chicken breasts or thighs, whichever your preference is.
Heat a heavy bottomed pot with 1 TBS of cooking oil. Add the chicken once the pot is heated well. Brown the chicken well, then add in your onions and garlic and let it cook for about 10 minutes, stirring often.
In a separate pot melt your butter, then add the heavy whipping cream. Stirring constantly with a whisk. Let it simmer for a minute or 2 then add in the Parmesan cheese. Continue stirring until it's all melted through, then remove from the heat and set aside.
Once the onions and garlic have cooked, add in your Cajun seasoning, and stir well.
Add the sauce to the pan with the cooked chicken and stir well.
Next add in your cooked, drained noodles and stir.
Serve hot, topped with extra parmesan cheese and green onion tops.
